DRY-AGED BEEF TATAR WITH TRUFFLES
ingredients:
- 400 grams Beef fillet Dry-Aged
- Fleur de Sel
- pepper from the grinder
- 2 shallots
- 20 grams of summer truffles
- White bread, roasted
- Very very good olive oil
Preparation:
1. First cut the fillet of beef into slices.
2. Then cut into strips with a sharp knife.
3. Now cut the strips into very very small pieces.
4. Chop everything thoroughly again.
5. Put the meat in a saucepan.
6. Mix with olive oil and chopped shallots.
7. Salt, peppers, to taste.
8. Leave to cool for 20 minutes.
9. Pour into small round forms.
10. Truffle over it and serve immediately.
