El Celler de Can Roca renews its commitment to the mychef professional cooking equipment range by Distform

El Celler de Can Roca is a restaurant which is run by the brothers Joan, Josep and Jordi Roca. It was rated second-best restaurant in the world in the list The World’s 50 Best Restaurants 2018. It has, once again, opted for the brand mychef by Distform and its new range of equipment for professional kitchens. The restaurant, chosen as “Best Restaurant in the World” in 2013 and 2015 by Restaurant magazine, and the holder of three Michelin stars, has four mixed intelligent mychef evolution ovens and an iSensor vacuum packer by Distform, the leading manufacturer of professional catering solutions. The collaboration between El Celler de Can Roca and Distform goes back to 2010 when its chef, Joan Roca, promoted, together with the company, the creation of the TSC (Thermal Stability Control) patent of its ovens.

El Celler de Can Roca is one of the most noteworthy examples of trust in the mychef range over the years. This restaurant introduced the technology of the Distform ovens with the launch of the first model TekTherm, which met Joan Roca’s need for a compact oven that would maintain the greatest possible thermal stability during vacuum cooking and cooking at low temperatures. Thanks to their TSC patent, the mychef ovens measure the temperature of the cooking chamber several times a second to transfer the necessary energy and keep a constant temperature during the entire process. Therefore, the chefs at El Celler de Can Roca can cook safely and with temperature changes of only ± 0.2ºC, which results in energy savings of up to 23% compared to other ovens on the market. 

Moreover, the new mychef evolution models installed at El Celler de Can Roca have the quickest and safest steam generation and management system: SmartClima Plus. With their MultiSteam technology, the mychef ovens release steam five times quicker than ovens that use a reboiler and completely free from pathogens, thanks to the UltraVioletSteam patent. This is why Joan Roca, who was voted “Best Chef in the World” for the second time in 2018, has opted for a mychef evolution S 6 GN 2/3 oven, two mychef evolution S 9 GN 1/1 and a mychef evolution L 10 GN 2/1 with different capacities to provide his services.

Regarding the use of iSensor, El Celler de Can Roca is a leading example in terms of vacuum cooking, which means that it needs a machine that can meet its requirements and truly respect the product. In this sense, the iSensor automatic mode offers a key advantage: perfect packing without the need for supervision. As soon as you close the packer, the iVac patent automatically detects the size of the food in the bag, the quantity, type and whether it is liquid or porous. Likewise, the iSeal and SCS patents regulate the time and temperature of the seal for each cycle and they calibrate according to the external atmospheric pressure conditions, giving an optimum result. These features were key in the Roca brothers’ choice. 

Intelligent ovens and packaging machines

El Celler de Can Roca has chosen to renew its kitchen equipment with the award-winning products of the new mychef range, which went on sale at the beginning of this year. The intelligent mychef evolution ovens and the iSensor vacuum packer are characterised by their unique combination of technology and design, which guarantees easy use, greater precision and maximum savings in terms of resources.

A distinguishing feature of the mychef evolution ovens is their LCD touchscreen and intelligent cooking assistant, MySmartCooking, which guides the user with simple steps. Moreover, the El Celler de Can Roca team can control its ovens remotely using the MyCloud connection system which is compatible with mobiles, tablets and computers.

The excellent cooking abilities of the mychef ovens combine with the perfect vacuum packing of the iSensor. As well as the outstanding merits of the automatic mode, there are also many advantages to the manual mode, such as the Multi Cycle Vacuum patent, which can repeat up to 9 vacuum cycles consecutively, and the Vacuum Standby, which can maintain the vacuum in the chamber for an indefinite period. All these features allow Joan Roca and his team to apply multiple creative techniques to their dishes, such as vacuum impregnation, food flavouring or the creation of solidified mousse, among others.
